About This Recipe

Golden toasted bread. Sun-ripened tomatoes. A generous drizzle of CYRHANA Extra Virgin Olive Oil from the Sidi Bouzid region of Tunisia. This bruschetta proves that great cooking starts with exceptional ingredients — and very little else.

Ingredients

  • 4 thick slices sourdough or ciabatta bread
  • 3 ripe tomatoes, finely diced
  • 2 cloves garlic, halved
  • 3 tbsp CYRHANA Extra Virgin Olive Oil
  • Fresh basil leaves
  • Sea salt and black pepper
  • Optional: balsamic glaze to finish

Preparation

  1. 1

Toast the bread slices until golden and crisp on both sides — in a grill pan or under the broiler.

  2. 2

While still hot, rub each slice generously with the cut side of a garlic clove. The heat activates the garlic aroma.

  3. 3

Season the diced tomatoes with sea salt, black pepper, and half the CYRHANA olive oil. Let rest 2 minutes.

  4. 4

Spoon the tomato mixture over each toast slice.

  5. 5

Finish with a final drizzle of CYRHANA and fresh basil leaves. Serve immediately.

Chef's Tip

The key is to drizzle the olive oil twice — once into the tomatoes and once over the final dish. This gives you both depth of flavour and a beautiful finish.
